This last burchering we had the butcher make a crown roast. It is a roast made using the portion of th elk that DelMonicos come from, it would be a great roast to use when entertaining. Let us know if you are interested and we can save it or bring it to the Troy Market with us.

The Troy Market begins the summer season on the 2nd of May. This means we will be there the first, third and fourth Saturdays of every month. The second Saturday we will be attending the Gloversville Market. (With the exception of May when we will go to Gloversville on the third Sat. )

The elk are doing great! The bulls have dropped their buttons and are beginning to show the new growth, this stage of antler growth is referred to as the velvet stage. They look pretty shaggy right now; all the winter hair is starting to shed out.
